Ingredients for 1 serving
- 2 onions
- 1–2 cloves of garlic
- 1 tsp tomato paste
- 8 red tomatoes
- 1 bunch of basil
- 1/2 soup cube
- 1 tsp Herbes de Provence
- 150 g (whole grain) bread
- 1 tbsp olive oil
- 1 tbsp black balsamic vinegar
- 2 tsp low-fat quark
- 1 tsp butter
- 1 pinch of sugar
TIP: The double amount of soup without bread is perfect for a low-carb day!
Preparation
- Finely diced onions and a pressed clove of garlic are sautéed in a pot with oil until translucent, sprinkled with a pinch of sugar, tomato paste added and fried briefly.
- Then add the chopped tomatoes, season with soup cube, pepper, salt, and herbs, and let simmer for 10 minutes.
- Meanwhile, chop the basil. Toast the whole grain bread, optionally rub with garlic and spread with butter. Stir the basil into the soup and puree until creamy. Now add 1 tsp quark.
- Cut the bread into small cubes and sprinkle on top.
