Couscous Salad with Smoked Tofu

Ingredients for two servings

90 g couscous
100 ml broth
100 g smoked tofu
5 cherry tomatoes
1/4 cucumber
1 spring onion
6 roasted walnuts
1 tsp mustard
1 tsp honey
1 tbsp oil
1 tsp white balsamic vinegar
1/2 bunch parsley

Preparation

  1. Slice the smoked tofu and cucumber.
  2. Bring the broth to a boil, then pour it over the couscous. Stir and let it soak for 3 to 5 minutes.
  3. Chop the tomatoes and spring onion into small pieces. Put all ingredients including the prepared couscous into a bowl. Chop the parsley and mix it with mustard, honey, oil, balsamic vinegar, salt, pepper, and the other ingredients.
  4. Finally, fry the smoked tofu on both sides in a little oil until golden brown and serve with the salad.
